
Lemon Squares or Gluten Free Lemon Squares
2 cups flour
1/2 cup icing sugar
1 cup margarine
4 eggs
2 cups white sugar
1/4 - 1/2 cup lemon juice
1/4 cup flour
1/2 tsp baking powder
Rub together flour, icing sugar and margarine. Press into 9 X 13 pan. Bake at 350 for 20 minutes. Blend eggs, sugar and lemon juice until thick and smooth. Add flour and baking powder. Blend together. Pour over base and bake at 350 for 25 minutes. Sprinkle with icing sugar after baked. If you are making these gluten free, use all gluten free ingredients. Also add 1/2 tsp of xanthum gum and 1 extra tbsp of flour to base mixture.
